Refined Traditional Balsamic Vinegar of Modena DOP

Traditional Balsamic Vinegar of Modena PDO Affinato is produced in an artisanal manner and strictly complies with the Production Regulations which require a minimum aging of 12 years . It presents itself in an elegant way thanks to the typical bottle, spherical in shape with a rectangular base in solid glass, designed exclusively by the designer Giugiaro. Using this type of bottle for Traditional Balsamic Vinegar of Modena PDO is mandatory for all producers, as it is required by the Production Regulations.

It favors the sweet and sour balance essential for a balsamic for daily use. Affinato Traditional Balsamic Vinegar of Modena PDO is characterized by a dark brown, deep and shiny colour;

Ingredients :

  • Cooked must of Lambrusco Grasparossa grapes
  • Trebbiano Montanaro
  • Trebbiano di Spagna

It is a 100% artisanal product. Maximum acidity of 6%. Contains Natural Sulphites which are formed during the normal fermentation of cooked must. By aging in small wooden barrels the product may present a sediment.

    In 2021 I visited La Secchia Antica Acetaia and participated in a tasting of all of it's products. It was an enlightening experience after which using store bought balsalmico was no longer an option. The deep, rich and powerful flavors of their products were a quasi religious experience and I have been using their balsamico since then. I have bought many of their products over the years and never been disappointed.

    Let me introduce myself, I am Lorenzo Righi.

    My vinegar factory was founded in 1950 by my father who created what is an ancient local tradition in Modena, the production of Balsamic Vinegar.

    Over time I have been responsible for the expansion of the Acetaia until today, with over 600 barrels dedicated to production.

    I have always tried to have a very rigorous and respectful approach to production tradition.

    My company, in fact, has always remained in the artisan sector...

    We have never turned into an industry even though, today, 99.9% of balsamic vinegars are of industrial origin.

    There is no poetry in what I do, only coherence and awareness that my children are the first consumers of my product, and I expect them to consume a good, and above all healthy, balsamic vinegar.
