This Aceto Balsamico Tradizionale DOP AFFINATO, is aged for a minimum of 12 years. The grape must is obtained from Lambrusco and Trebbiano. The Juice is cooked and then placed in small wooden barrels, from 60 Ltrs to 20 Ltrs. The ageing, the quality of the wood, and the racking from a barrel to another, create an excellent organoleptic profile.
